Hi and welcome to Leonor’s Sweet Creations!

Have you ever heard about healthy or functional baking? Yes, you’ve heard it correctly! Healthy desserts that are good for your body. This is what I do here. I transform traditional recipes into healthy cakes and desserts, especially for those with food restrictions, suffering from diabetes or following a strict diet, like vegan. My desserts are, in fact, good for anyone. They are so delicious that most people don’t even notice that they are gluten-free, dairy-free and refined sugar-free. Many recipes are also egg-free and therefore, perfect for vegan as well. 

Functional desserts are made of high quality products, that are as natural as possible, and therefore full of nutrients like fibres, vitamins, minerals, good fats and easily digestible proteins. All ingredients used are not inflammatory or toxic. I don’t use artificial colorants, preserves or ultra-processed ingredients. 

I basically substitute every ingredient that is allergenic, inflammatory or potentially toxic with nutritious ingredients that feed my body with what it truly needs, keeping me healthy, while I enjoy my beloved desserts. 

It sounds like a dream, right? Well, to me it is already reality. My health has improved largely, ever since I have changed my way of baking and cooking.

I was a traditional baker and sugar artist for over 10 years. I opened a shop in Heidelberg, Germany in 2011. From a shop it developed into a cake school. For years, besides baking and decorating beautiful birthday and wedding cakes, I was also teaching French patisserie, American/English baking, Portuguese and Italian specialties and all sorts of cake decorating techniques. 

It was when I discovered that I was intolerant to gluten, lactose, casein, eggs and so many other ingredients I was consuming in large scale on a daily basis. 

I have then decided to close my shop in Germany and move back to Portugal, my home country. 

But I knew I could not live without desserts. So, I had to find a way to adapt my recipes to my new situation. There was no alternative but to focus on learning all about every single ingredient substitution I could find, testing and experimenting them all, until I was satisfied with the results I was getting. My standards were high, because of those previous 10 years of professional baking, eating all those gorgeous and delicious desserts I was making for my clients. It took me a while to be totally happy and satisfied with my recipes. But I can now say, most of my desserts taste like the original version or they are even better.

I am a happy positive person that believes everything happens for a reason. My food restrictions brought me to a place where I can offer desserts to my kids, family and friends, knowing it is not a poisoned gift. It is a dessert not only made with love (like before) but it is also very nutritious and good for them! 

I hope I can inspire many of you to follow the same path and be healthier, while indulging in amazingly delicious desserts!

It’s my duty now, to share all my discoveries, knowledge and experience with all my family, friends, customers and followers.

I want to give everyone the possibility of having the same quality of life, without having to go through the same long, painful and expensive process of experimenting, failing, wasting time, food and money – for around 2 long years – until I finally achieved my desired baking results in all sorts of recipes.

I have therefore created the ‘Functional Desserts Masterclass- learn how to create and transform healthy mouthwatering desserts’ , where I teach all about baking techniques, nutrition, and healthy desserts creation and transformation.

My mission is to make healthy desserts the ‘new normal’, so we can all eat desserts totally guilt-free, without having to choose between compromising the flavor, look or consistency of our favorite cakes and desserts, or jeopardising and harming our health.

Our most recent project is the transformation of traditional recipes into healthy desserts and cakes. Yes, you’ve heard it correctly! Healthy desserts and cakes. Desserts that are made with high quality products full of nutrients that our body actually needs, instead of empty calories and pure fat.

All of this, without losing flavor and consistency. It has been a hard journey to reach success, but I’m mostly pleased with the results. Soon, we will launch this course so that everyone can enjoy some delicious desserts, even those allergic to gluten, lactose, eggs, or following a strict diet like diabetic, vegan, keto, paleo or any other sort of diet. After all, we all deserve to sweeten our lives, totally guilt free. I am super excited about this project!

More about me?

I am originally Portuguese. But I’ve been around the world and lived in many countries. Initially, I studied International Relations, and specialized in development projects, which led me to live in Italy, Germany, New York, New Zealand and Australia. But halfway through my career I fell in love with a German and started a family.

It was then, that I discovered the wonderful world of Cake Design and decided to take on my creative and gourmet side. After all, discovering, learning and trying new things has always been an addiction and a passion for me.

Leonor’s Sweet Creations was established in March 2012 in Heidelberg, Germany as a shop for cupcakes, macarons, cookies and decorated cakes. 

In 2013, I started giving workshops. Several newspapers, magazines and blogs wrote about me and Leonor’s Sweet Creations, and I was invited to several television programs. I’ve tried, baked, designed and decorated thousands of cupcakes, macarons, cake pops, cookies and customer made cakes.

In 2014, I expanded my team and created the Leonor’s Sweet Creations Cake Academy, thus expanding the workshops offer.

In 2015, we partnered with wedding planners and some photographers and decorated dozens and dozens of beautiful and elegant wedding cakes.

In 2016, I started a YouTube channel, where weekly I give recipes and creative ideas and teach professional techniques to make and decorate all kinds of sweets. I also started posting regularly on Pinterest, Facebook and Instagram, thus sharing our creations with the world.

In 2017, we decided to concentrate only on our cake academy classes and expand the Youtube channel to English and Portuguese.

2020 was the annus horribilis. From March onwards, although we had almost all classes sold out, we had to cancel all of them, due to the Covid 19 pandemic. I’ve then launched a series of videos with healthy recipes on YouTube and Instagram. After all, life always has 2 sides and nobody lives only on sweets, right?

On the 01.01.2021, I’ve launched our new website, expanding our classes offer to an online class regime. This way, we hope to continue to be able to teach and be present at your events and in your culinary day-to-day, despite all odds. 

The most exciting project for me right now, is the transformation of traditional dessert recipes into healthy ones, not losing their flavor or consistency. I have been exploring, experimenting and discovering the many wonderful advantages of Functional Confectionery and I am astonisehd how delicious and nutritious healthy desserts can be. I have therefore enlarged my course and recipe offer, so that you can choose which type of recipes and courses you want to try and learn more about: traditional or healthy dessert recipes. 

For me, and my team, it is a joy and a privilege to be able to share our creative and delicious world with thousands of curious people and sweet toothed artists!
