Healthy Mug Cake (it only takes 5 minutes)

Today, just before I sat down to write this post, I craved something sweet, which made me a little anxious, because I had nothing to satisfy my sweet tooth and I was lacking the time to bake. 

But the thought of having a dessert wouldn’t go away, although I tried, believe me! I’ve tried. I finally surrendered and decided to go prepare something. Of course, this “something” would have to obey 3 main requisites: 

  1. It would have to be really quick and simple.
  2. It would have to be healthy.
  3. And it would have to be amazingly delicious.

What else but the MUG CAKE!? And so, I did it!

I’ve prepared myself a mug cake, following the functional baking principles, which I’m about to share with you. 

This version of chocolate mug cake can be baked in the microwave or in the oven. Using the microwave is the fastest option, but you can also do it easily in the oven and it will only take about 20 minutes to be ready.

This recipe usually has very simple ingredients. For a healthy version you can substitute some ingredients, or even omit some others. I didn’t use eggs nor butter but I guarantee you that it was still very delicious. 

So let me give you some options here for substitutions:

  • Oat flour – I use crushed oat flakes, but you can substitute with spelt flour or some gluten-free mix
  • Cocoa – can be substituted with carob flour (taste changes)
  • Coconut sugar – or any other sugar or sweetener of your choice. You can even omit sugar and sweeten it with fruit like banana or dates
  • Coconut oil – can be substituted with olive oil or ghee butter
  • Plant-based milk – any variety works in this recipe, whether it’s oat milk, almond milk, coconut milk,…

Ingredients

  • 3 Tbsp oatmeal
  • 2 Tbsp cocoa powder
  • 1 Tbsp coconut sugar
  • 1 Tbsp coconut oil
  • 3 Tbsp plant-based milk 
  • 1/4 teaspoon baking powder
  • 1 square (28 g) of chocolate (I’ve used 70% cocoa)

Instructions

Chocolate Mug Cake (microwave version)

  1. Place the oat flour, cocoa powder, coconut sugar, coconut oil, milk, and baking powder in a cup (make sure it is a microwave proof cup).
  2. Mix everything very well with a fork or spoon until it forms a dough without lumps.
  3. Place the chocolate square in the middle of the dough.
  4. Place the cup in the microwave and heat at maximum power for 2 minutes (if you want it more dry than moist, leave it a bit longer.)

Chocolate Mug Cake (oven version)

  1. Preheat the oven to 180ºC/360°F.
  2. Place the oat flour, cocoa powder, coconut sugar, coconut oil, vegetable drink and baking powder in a cup (make sure it is an oven proof cup)
  3. Mix everything very well with a fork or spoon until it forms a dough without lumps.
  4. Place the chocolate square in the middle of the dough.
  5. Place the cup in the oven for 20 minutes.

And that’s it! Simple, healthy and amazingly delicious. You can hardly believe it, right?
