I asked my students one question.

What changed for you?

I expected recipes. The swaps that worked, the techniques they finally got right. Some of that came back. But what came back more, from students with nothing else in common, was a different word entirely.

Understanding.

Why Recipes Were Never the Real Answer

Not just that coconut cream sets a mousse, but why. Not just the steps of an ice cream recipe, but the role each ingredient plays well enough to fix it the next time something is off.

“I learned a lot of things that I couldn’t have learned from books,” one student wrote. Another: “My baking skills developed a lot. Even after two years I can still do it.” A third: “The classes were very clear and easy to understand and I got many very creative new ideas.

None of them mentioned a single recipe by name. All of them described something closer to confidence.

What a Functional Dessert Course Actually Teaches

A recipe gives you one result. Understanding gives you every result after it.

Know why almond flour works in a no-bake base instead of wheat flour, and you can build any base you want. Know what full-fat coconut cream actually does to a cold-set texture, and you can fix any mousse that refuses to set. Know what natural sweeteners are doing beyond sweetness, and you can adapt to whatever fruit is actually in season, without losing the result.

This was never about memorizing substitutions. It is a framework, the kind that makes you reach for ingredients with confidence instead of anxiety. 

What I Actually Teach

The ingredients matter in my program. But what I teach underneath them is how those ingredients work together, why, and what happens the moment you change one variable.

That is the part that stays. The moment a recipe stops being a sequence of steps and becomes a set of decisions you actually understand.

Nobody talked about recipes. They talked about finally understanding why things work. That is exactly what I teach.
